southwestern stir-fry

1 cup bottled salsa
2 tsp cornstarch
1/2 green pepper, diced
1/2 red pepper, diced
1 small zucchini, diced
1/2 onion, diced
1 lb ground beef or chicken
1 can diced tomatoes
1 can black beans, drained
1 can whole corn, drained
shredded cheese
tortillas or tortilla chips

combine salsa and cornstarch in a bowl - set aside.

in a large skillet heat about 1 tbsp oil. add green pepper, red pepper, onion and zucchini and stir-fry for about 2-5 minutes. remove and put on a plate.

add ground beef to skillet and cook until brown. drain off fat. add salsa to the skillet - cook and stir until thick & bubbly. return cooked vegetables to the skillet - stir all ingredients until coated. add can of tomatoes, stir and then cover and cook for about 1 minute or until hot. sprinkle with cheese and serve with corn, beans and cheese on tortillas.

*here is my two cents: i don't make this with ground chicken or beef. i use chicken breasts and just cut them up into bite-sized pieces and cook them in the skillet - - but then i put them aside in a separate bowl. we like to add the chicken separately because this makes a lot and it takes us awhile to eat and i don't really like the chicken (or beef) sitting in the bowl for days with all the veggies. also, we eat this more like a taco salad. we'll take the stir-fry mixture, add some beans, corn and chicken to a bowl and stir it up. then we sprinkle the cheese on corn chips, melt the cheese and dip the chips into our "stir-fry". it's the moistest!
