3 cups oatmeal (not quick-cooking)
1/4 wheat germ (if desired)
1/2 cup brown sugar
1/4 cup canola or other cooking oil
1/4 tsp. salt
1 tsp. vanilla
2-3 tbsp. water
put oatmeal, salt & wheat germ in a mixing bowl - set aside. put sugar and water in a saucepan, add 1/2 tsp of vanilla. bring to a boil, let boil for one minute. let mixture cool slightly. add oil and the other 1/2 tsp of vanilla. pour over oatmeal/wheat germ and mix well. spread onto cookie sheet and bake at 250 degrees for about 40 minutes to 1 hour. (longer will make it crunchier) take out of oven, let cool for a few minutes and then scrape it off the pan or it will stick.
you can add raisins, cinnamon, craisins, sunflower seeds or whatever else you want! store this in an air tight container, preferably in the fridge. serve it with fruit, in yogurt, or just eat it straight out of the bowl like we do.
*note: i did not add any dried fruit to mine - but i read that if you do, you should add it after it is done baking. i think other additions (ie: sunflower seeds, etc) could be added before baking. i'm not sure if you would want to add a little extra oil and/or sugar if you added extra ingredients...
also, i read that granola will get crunchier as it cools completely, but i only noticed a slight change in crunchiness. so i would recommend a little taste-test to decide how long to bake it in your oven. also, let's be honest friends, there is nothing healthy about this granola - but it sure is tasty.
