banana pancakes

1 cup flour (i like 1/2 white, half wheat best)
2 tsp baking powder
1/4 tsp salt
1 TB sugar
1 egg
1 cup milk
2 TB oil
1/2 tsp vanilla
2 ripe bananas, mashed

whisk together dry ingredients. whisk together wet ingredients. whisk together wet and dry ingredients. make into pancakes.

notes: i've made these 3 times since last week. yum! they are a little heavier - like a pumpkin pancake would be. i think it is easier to mash the bananas up if you add a little of the milk to it while you are mashing. do i love them more than pumpkin pancakes? no. but they are easier to make, i always have overly ripe bananas to use, and i don't have a half used can of pumpkin sitting in my fridge. bonus points.
