Spanish Rice

1 tsp. garlic powder (or one clove crushed)
3-6 Tbsp. oil
2 cups rice
2 tsp. salt
1/2 onion, chopped
1/2 bell pepper, chopped
1 can tomatoes
4 cups chicken broth
* I also like to add a dash of cumin and a little cilantro. Season to taste.

-Brown the rice in oil. Blend the onions, peppers, garlic, salt, tomatoes, and broth in blender. Add to rice when rice is browned. Wait until boiling, then cover. Cook on low for 20 minutes.

This is a great side for any Mexican dish- plus it's packed with veggies and veggies + comfort food = Yum.
