loaf french bread
1/4 cup mayonnaise
1 tsp dried basil
sliced mozzarella cheese
prosciutto, cooked (or cooked bacon)
tomatoes, thinly sliced
cooking spray
combine mayo and basil. spread mayonnaise/basil mixture on slices of french bread. on one slice of bread, add cheese, then proscuittto, then tomato slices (add more cheese if you want). top with other slice of bread (mayo sides facing in). heat a pan over medium heat and coat pan with cooking spray. add sandwiches to pan. place a heavy skillet (i used a pot) on top of sandwiches and press gently to flatten. cook 3 minutes on each side or until bread is toasted (leave cast-iron skillet on sandwiches while they cook). or, if you have a panini maker, use that.
*note: so i didn't use basil or mozzarella (although i'm not discouraging their use). i did use bacon - next time i'll try turkey bacon instead of the real deal. cook the bacon well or it might get soggy-ish when you make the sandwich. also, i added bagged spinach leaves for a little green in each sandwich, which was quite tasty. the only problem with these sandwiches is that you'll probably eat too many. de-lish (from my friend erika)
