whole-wheat chocolate chip cookies

cream together:
2 cups softened butter
1 3/4 cups brown sugar
1 1/2 cups white sugar
3 eggs
1 tbs vanilla

mix in:
5 1/2 cups whole-wheat flour (or 3 c. flour and 4 c. rolled oats blended into flour in a blender)
1 1/2 tsp salt
1 1/2 tsp soda
add 3 cups semi-sweet chocolate chips (or raisins, nuts, M & Ms etc.)

bake 375 degrees for 5-7 minutes. take out when barely brown and the tops are no longer shiny.

*melissa says: i've made these twice - once with all butter and once substituting applesauce for half of the butter and they definitely formed and tasted better with all butter, but it works either way. it's a big batch, but I just baked (usually 8-9 minutes a batch down here in Texas) all of the dough into cookies and then froze the extra cookies. they are really good and you don't notice the whole wheat until a few days later...get it?
