oven fries

2-4 russet baking potatoes - scrubbed clean
olive oil
salt & pepper

wash and dry potatoes. cut length-wise into quarters, then cut each quarter into 4ish pieces. (like a steak fry). put in plastic bag with a couple tablespoons olive oil and some salt & pepper. shake until everything is coated then put on a greased baking sheet. bake at 425 for 15 minutes, then turn and bake for another 10 to 15 minutes. eat right away for yummiest results.

notes: i'm obsessed with roasting vegetables. it is super easy and so good! so you'll probably be seeing more of these recipes. anyway...

be conservative with the salt & pepper until you have a good idea of how much to add for your tastes. i'm still experimenting and through this process i've come to realize that you can always add more later...but it sure is tricky to get salt off of the potatoes after you already put it on. :) if 425 degrees is too hot and your potatoes are getting burned before they are cooked through, try cooking them at 400ish for the first 15 minutes and then turn it up to 425 for the last 15 minutes.
